Primal / paleo – kuku paka (chicken coconut curry)

I used to go to a cookery class, and one of the best recipes I got from there is a Swahili dish called kuku paka. Here is the recipe for your enjoyment:

  • 4 chicken thighs
  • 4 shallots (finely chopped)
  • 2 cloves garlic
  • 1 inch fresh ginger
  • 1 tsp lazy chili (or could be an actual chili, finely sliced)
  • 4 tomatoes / 8 cherry tomatoes / 1 tin chopped tomatoes
  • 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cardamons
  • 1/2 tsp ground cloves
  • 250ml chicken stock
  • 1 tin coconut milk
  1. Brown the chicken thighs in a frying pan and put them to one side.
  2. In the same pan, fry the shallots, ginger and garlic for a couple of minutes.
  3. Add the chopped tomatoes and cook for a couple of minutes.
  4. Add the spices and chili and cook for one minute.
  5. Add the coconut milk and stock and bring to a simmer.
  6. Return the chicken to the pan and bring the mixture to a boil.
  7. Simmer the curry for around 30 minutes to one hour.

This recipe will give you enough chicken for two and quite a lot of sauce. You can double the amount of chicken but keep the sauce ingredients the same for four. You could also substitute chicken breast for the chicken thighs if you prefer, or use skinless boneless chicken thighs.
